Blueberry Lemon Tart

Ingredients
- 1 cup lemon juice (about 6 lemons)
- 5 tablespoons grated lemon zest
- ½ cup melted sweet butter
- 6 eggs, slightly beaten
- 1 cup granulated sugar
- 9-inch partially baked Sweet Buttery Tart Crust, 1 inch deep
- 1½ cups blueberries, rinsed, sorted, and dried
- Confectioners sugar
Instructions
- Preheat oven to 400°F.
- Whisk lemon juice, lemon zest, and melted butter in medium-size bowl. Beat in eggs and sugar; mix well.
- Pour into partially baked tart shell and bake about 20 minutes or until golden brown.
- Arrange blueberries (or other fresh fruit) over the warm filling, pressing lightly.
- When cool, dust with confectioners’ sugar.

Ingredients
- 4 ounces bittersweet chocolate, chopped
- 2 tablespoons unsalted butter
- 1 (14 ounce) can condensed sweetened milk
- 1 teaspoon vanilla
- Pinch of salt
Instructions
- Gently melt the chocolate and butter together in a double boiler* or in a small saucepan over low heat, stirring frequently.
- Add the milk, vanilla, and salt to the chocolate mixture and stir to combine. Cook for five minutes, or until hot and slightly thickened.
- Serve immediately over ice cream.
- Maybe stored up to 3 weeks in a tightly sealed container in the refrigerator. Reheat gently over low heat stirring frequently, or in the microwave on high, stirring every 20 seconds.15
Just Desserts at Christmas
Our children and grandchildren were with us for the holidays and enjoyed all the traditional foods that we’ve been preparing for years but this year I tried a new dessert in the week after Christmas. My daughter, Kristin, declared it the best ever! Try our recipe for peppermint ice cream sandwiches! I’ll post the recipe now and add pictures later. I prepare and photograph everything on this site and it’s too tempting to have these delicious ice cream sandwiches in the freezer when I’m trying to lose a few pounds.
