Recipe type: Breakfast
This recipe is sometimes called German Oven Pancakes. It’s impressive as it emerges from the oven and should be served immediately.
- 6 large eggs
- ¼ cup orange juice
- 1 cup milk
- ½ cup sugar
- 1 cup flour
- Pinch of salt
- 6 tablespoons butter
- Preheat oven to 425°.
- Mix all ingredients except butter in blender at medium speed.
- Melt 1 tablespoon butter in each individual baking dishes or melt all 6 tablespoons in an 8X12 glass baking dish.
- When butter has melted, pour batter into individual baking dishes or into large baking dish and bake for 20 minutes.
- Pancake will be puffed over the edge of the baking dish. Serve immediately.
This can be served with a squeeze of lemon and dusted with powdered sugar, fresh fruit, maple syrup or a combination of these things.
