This recipe is sometimes called German Oven Pancakes. It’s impressive as it emerges from the oven and should be served immediately.
  • 6 large eggs
  • ¼ cup orange juice
  • 1 cup milk
  • ½ cup sugar
  • 1 cup flour
  • Pinch of salt
  • 6 tablespoons butter

  1. Preheat oven to 425°.
  2. Mix all ingredients except butter in blender at medium speed.
  3. Melt 1 tablespoon butter in each individual baking dishes or melt all 6 tablespoons in an 8X12 glass baking dish.
  4. When butter has melted, pour batter into individual baking dishes or into large baking dish and bake for 20 minutes.
  5. Pancake will be puffed over the edge of the baking dish. Serve immediately.

This can be served with a squeeze of lemon and dusted with powdered sugar, fresh fruit, maple syrup or a combination of these things.
