Lemon Orzo with Garlic
Recipe type: Pasta, Side Dish
- 1 cup uncooked orzo
- 1½ cup fat-free, less sodium chicken broth
- 3 cloves garlic, chopped
- 2 tablespoons fresh lemon juice
- 2 teaspoons olive oil
- 2 tablespoons chopped italian parsley
- Heat a medium saucepan over medium-high heat. Stir together pasta and chicken broth in saucepan. Bring to a boil. Lower heat, cover and cook until pasta is al dente (about 5 minutes) or until liquid is absorbed. Stir in garlic, parsley, lemon juice and olive oil.
- Keep warm.
